Sweet and Sour Sauce (canned)
8 cups chopped or blended tomatoes
4 cups chopped onions
4 cups chopped green peppers
2 cans (20oz) pineapple tidbits-drain and save the juice
5 cups sugar
1/2 cup soy sauce
3 cups distilled white vinegar
Add ingredients as you prepare them to a large pot and cook on low-med heat giving the ingredients time to cook down.
In separate pan combine:
1 1/2 cups sugar
1 1/2 cups "ultra gel" (modified food starch)
1 cup water
pineapple juice
Stir on low heat until everything is mixed together (don't boil). Add to large pot 1 Tlb at a time (gets clumpy so you ned to smash on sides of pan to help dissolve) or found it's easier to add some of the hot mixture from the large pot (about 1-2 cups and add slowly) into this mixture and stir and then pour it back into the large pot. This helps with the clumping.
Wash jars
Fill jars with sauce, then clean tops of jars to get a good seal, boil water, take off heat and add lids to water for about 1 minute screw rings on jars
Yield:
About 13 /12 pint size jars
Water Bath:
ADd water about 1 inch above the jars-don't stack jars and try not to let them touch
Bring to a boil with the jars in the pan and then start the timer for 35 minutes-leave lid on pan while boiling. Take jars out as soon as done and place on towel.
